Glaciers Cafe was an independently-owned neighborhood cafe. It started as a frozen custard stand in Wayzata prior to moving to the Longfellow neighborhood in South Minneapolis and becoming a full-service restaurant.
The restaurant closed for one month during renovations. HOLOS Creative managed the entire project from hiring specialists and selecting flatware to planning the grand opening.
Name, logo, and color palette was still heavily associated with frozen custard roots. In an effort to attract more business, the menu was too expansive and lacked a strong focus. The entrance to the restaurant was not inviting and the layout of the dining room was confusing.
Working closely with owner, Ben Smith, we completely reinvented the restaurant filling the need for a vegetarian-friendly neighborhood destination. The restaurant was renamed Mosaic Cafe in honor of the two-store mosaic on the side of the building and artist Corinna Quist-Chiba designed a beautiful new logo, color palette, menu, and signage.
Studio M Architects worked with us to create a new layout that increased the number of seats while brightening and opening up the space. A kitchen consultant worked within our new menu focus to develop delicious recipes, plan an efficient kitchen, and train staff.
We also worked closely with Joe Lusso to design a new website, social media strategy, and loyalty program.
Mosaic Cafe has become a beloved part of the Longfellow neighborhood and a destination for vegetarians and omnivores alike. It has received many rave reviews and continues a fruitful partnership with its neighbor, Harriet Brewing.
From Mpls/St. Paul Magazine: Nicely rounding out the scene on Minnehaha and East Lake is Mosaic Cafe, the smart and slick evolution of Glaciers Café. Owner Ben Smith hired outside help to make over his custard shop. It works. The small space is bright, the patio overlooking the undersung mosaic is comfortable and welcoming, and it’s becoming a nice little neighborhood gathering space.
The fast-casual menu is food-forward, using grass-fed beef for burgers, offering Ferndale Market turkey on sandwiches, and putting up a tempeh sloppy joe that could tempt carnivores. And in the end, there’s custard, a flight of custard if you’d like. It’s substantially smooth and creamy with flavors such as sweet corn that hint at a playful kitchen. In fact, toppings such as salted caramel pretzels, candied Fritos, and spicy caramel corn make it even more fun. This is a good addition to an already well-flavored neighborhood.
